Visions of Messy Sugar Plums {Christmas is No Time for Perfectionism}

Twas the day before Christmas, and my cluttered kitchen
filled with cookies, goodies, boots, coats and mittens.
The sugar's out on table, in red, green and white
I do not need to tell you, by end, it was quite a sight.

You've been there I'm sure, it's a messy tradition,
we set aside tendencies to decorating perfection.
Sugar is everywhere, the cookies are messy
But every last goodie tells it's own happy story.

Spoons covered in frosting and finger licking elves;
I look at it all and laugh in spite of myself.
The kids had their fun, made their own version of pretty
To control their fun would have been really silly.

So in your holiday traditions, keep this in mind,
there is no room for perfect, I think you will find,
much peace love and joy in more "good- enoughs"
so please take perfectionism off your Christmas list of stuff.

For what fun is a mother who gripes and controls
how the cookies appear, I would hope that she knows
that perfection is costly and everyone works gaily
when a mother lets go, and redefines beauty.

For this is the season of upside-down things
of a God come down here, in a manger a King.
For the broken and messy, a star shines through the night.
May you find Him this Christmas, He's the way, the truth, the light!

Snow Snack

That's what my kids call it. And with 8 inches or more of white fresh fluff, it's a perfect day to scoop some up and make it a snack. When I was a kid, we used KoolAid mix, but today,

my kids just mixed up a glass of strong lemonade and ...

Scoop....

Drizzle....

 Stir....

Eat....

Yum!

Pecan Pie

Three posts in a day? That's almost annoying!

But Thanksgiving is coming, and today is Tuesday, which I sometimes call Tasty Tuesday for the purpose of sharing a recipe. Here is a family favorite. My husband especially requested it this year.

Pecan Pie

4 eggs
1 c dark corn syrup
1 c sugar
1 t vanilla
1/4 t salt
1 T melted butter

Mix above, then add 1 t vinegar

Pour in unbaked pie shell. (1 pie shell recipe: 1 c flour, 1/2 t salt, cut in 1/3 c regular crisco shortening, then add 3 T cold water, a little at a time.)

Add enough pecans to cover the top- 1/2- 1 c
Note: poke nuts down so the filling covers them or they will burn.

Bake 50-60 minutes at 350 degrees F.

Serve with real whipped cream. I'm hungry already!

saute til tender, then set aside:
3/4 c diced onion
1 1/4 t minced garlic

bring following to boil then simmer 15 minutes:
2 T chicken base
1 Qt. water
2 medium potatoes, cubed

Add onions, garlic, and sausage to potatoes and:
2 c Kale leaves(I use parsley)
1/3 c cream
Simmer 4 minutes. EAT!

Tasty Tuesday

Granola with Apple

5 cups whole oats
1/4 cup 10 grain cereal
1/4 cup whole wheat flour
1 1/2 teaspoons cinnamon
1 cup chopped almonds or cashews
1/2 cup apple or pineapple juice
1/2 cup honey
1/4 cup brown sugar(optional- will make granola chunkier)

Drizzle liquids over dry ingredients. Mix well.

2 cups shredded dried apple
1 pkg  (1/8 c) sesame seeds
Add apple and sesame seeds for the last half of drying so they do not burn.

Dry in food dehydrator 3 hours
or in oven at 300F for 30-35 minutes.

Serve with yogurt. Yum!

Taco Soup

A mainstay in our family's diet. Best of all, Robb loves it and makes it himself. I'm a fan of any meal I don't have to cook!

1 lb hamburger, browned
1-2 pkg taco seasoning
2 cans undrained corn
2 cans undrained chili beans
2 cans undrained diced tomatoes

Heat and serve with cheddar cheese and Tortilla chips. We also use it as a dip with Scoops chips.
